Quinoa Salad
Ingredients:
2 cups cooked Quinoa
2 cups diced Tomatoes or halved Cherry Tomatoes
1 cup diced Cucumber
1/2 cup diced Yellow Pepper
1/4 - 1/3 cup diced Red Onion
1 6-oz can Olives, chopped
1 Avocado, chopped (optional)
2/3 cup crumbled Feta Cheese
1 tbsp chopped Garlic
1/4 cup chopped Cilantro
Salt and Pepper to taste
Instructions
Cook quinoa according to package directions. You will need about 2/3 cup dry quinoa to get 2 cups cooked quinoa.
Combine chopped veggies, garlic, and feta cheese. Toss to combine and season with salt and pepper.
Combine veggies with cooked and cooled quinoa.
