Beef Stew
2 pounds beef roast
1 Tbsp oil
1 tsp fresh ground pepper
1/2 tsp thyme
1/2 tsp rosemary
1/2 tsp oregano
1 tsp garlic powder
2 bay leaves
2 tbsp soy sauce
2 tbsp tomato sauce
28 ounces beef broth
2 cups red potatoes, cut into 1 inch cubes
1 cup carrots but into 1 inch pieces
3 celery stalks, including the leaves
1/2 onion, cubed into 1 inch pieces
2 tbsp corn starch
1 Tbsp water
Instructions
Brown the beef in 1 tbsp oil. Add the pepper, thyme, rosemary, oregano, and garlic.
When the beef is browned, add soy sauce, tomato sauce and cook for another 30 - 60 seconds. Add the beef broth and bay leaves and bring to a simmer.
Place beef mixture into a crock pot, add vegetables, and cook on low for 8 hours or on high for 4 hours.
Before serving, mix corn starch with 2 tbsp water. Stir into stew and return to simmer to thicken.
Season with additional salt to taste.
