Whole Grain Blueberry Muffins
I made this recipe for my boys and their friends and they were gone within minutes. They are simple and straightforward to make but packed with great nutrition. Hope you enjoy!
Ingredients
3/4 cup whole wheat flour
3/4 cup oat bran
1/4 cup ground flax seed
1/2 cup sugar
1 tsp baking powder
1/8 tsp baking soda
1/2 tsp salt
1/3 cup oil
2/3 cup vanilla yogurt
1/2 cup applesauce
1 egg
Zest from 1 lemon
1/2 tsp almond extract
3/4 cup blueberries
Instructions
Preheat oven to 350 degrees.
Mix the flour, oat bran ground flax, sugar, baking powder soda and salt together with a whisk.
Combine the oil, yogurt, applesauce, egg, and lemon zest in a separate bowl until well combined.
Mix wet and dry ingredients together until combined.
Fold in blueberries.
Distribute batter across 12 muffin tins.
Bake at 350 degrees for 16 - 18 minutes, until muffin tips spring back when lightly touched.
