Coconut Orange Muffins
My family loves muffins on a Sunday morning and I love to start my day with whole grain goodness. And so began our tradition of making and creating a variety of whole grain muffins.
We're always looking for new flavors and this is one my boys helped me dream up. The orange and the cinnamon bring out the aromas of Christmas - a perfectly festive combination.
The great thing about muffins is that they are incredibly easy and quick to make. Without too much time and effort you can have a warm, delicious breakfast and with these muffins, you can feel good that you are nourishing your body for a great start to the day.
Coconut Orange Muffins
3/4 cup oat bran
3/4 cup whole wheat flour
1/4 cup ground flax seed
1/4 cup brown sugar
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 cup coconut
1/2 cup craisins
1/2 cup plain yogurt
1/3 cup oil
1 egg
1/3 cup orange juice concentrate
rind from 1 orange
rind from 1 lemon
1 Tbsp fresh lemon juice
Instructions
Preheat oven to 350 degrees.
Mix oat bran, flour, flax, sugar, baking powder, salt and cinnamon
Stir coconut and craisins into flour mixture.
In a separate bowl, mix yogurt, oil, egg, orange juice concentrate, lemon juice, and grated rinds.
Combine wet and dry ingredients.
Fill 12 muffin tins about 3/4 full.
Bake at 350 for 17 minutes, or until muffins spring back when lightly touched.
