Gingerbread Muffins

Ingredients
3/4 cup whole wheat flour
3/4 cup oat bran
1/4 cup ground flax seed
2 Tbsp chia seed
1/4 cup sugar
1-1/2 tsp cinnamon
1-1/2 tsp ground ginger
1 tsp ground cloves
1 tsp baking powder
1/2 tsp salt
1/2 cup molasses
1/2 cup applesauce (no sugar added)
1 egg
1/3 cup canola oil
Instructions
Preheat oven to 350 degrees.
Grease 12 muffin tins.
Mix flour, oat bran, flax, chia, sugar, cinnamon, ginger, cloves, baking powder, and salt.
In a separate bowl, mix the molasses, apple sauce, egg, and oil.
Mix wet and dry ingredients until just combined.
Fill 12 muffin tins to about 3/4 full. Bake for 15 - 17 minutes until muffin tops spring back when lightly touched. Be careful not to overbake. Enjoy!
